Province · South China
广东省 · Guǎngdōng Shěng — capital Guangzhou, cantonese / yue (the world's most exported chinese cuisine; dim sum, char siu, white-cut chicken, slow-simmered soups).
History & character
Guangdong has been China's principal trading window onto the maritime world for over a thousand years. Guangzhou (Canton) was the only Chinese port open to Western trade for the century before the Opium Wars, and the Pearl River Delta has remained the country's most outward-facing region ever since. The "Canton trade" of the 18th and early 19th centuries — tea, silk, porcelain out, silver in — built much of European China-fashion.
After 1979 the province became the laboratory for China's market reforms. Shenzhen, a fishing village across the border from Hong Kong, was designated a Special Economic Zone and grew into the country's most influential technology and manufacturing hub. The Pearl River Delta is now a single contiguous metropolitan region of roughly 70 million people, including Hong Kong and Macau as politically distinct but economically integrated members.
Cantonese culture — the language, the food, the tea-house tradition (yum cha), the lion dances, the Canto-pop music industry — has spread globally through the Cantonese diaspora more than any other Chinese regional culture. The province retains strong dialect and identity differences within itself: Cantonese in the central PRD, Hakka in the east, Teochew in Shantou.
When to visit

10d · Ten days through the south: Hong Kong as the entry point, Guangzhou for Cantonese food culture, then the karst river landscape of Yangshuo and Guilin before flying home.
14d · Fourteen days moving through four of China's most distinctive regional cuisines — the numbing heat of Sichuan, the dry spice of Hunan, the freshness of Cantonese cooking, and the sweet-savoury balance of Shanghainese food.
14d · Fourteen days across eastern and central China using only high-speed rail — no domestic flights. A lower-carbon alternative that also provides a closer view of the country at ground level.
