Cat's ear noodles (mao er duo) are a Shanxi pasta of small thumbnail-shaped pieces — the cook pinches small pieces of dough between thumb and forefinger, leaving a curved indentation that resembles a cat's ear. Stir-fried with vegetables (typically carrot, potato, mung bean sprouts), or served in a clear soup. The compact shape holds sauce well.
