Province · Northeast China
黑龙江省 · Hēilóngjiāng Shěng — capital Harbin, dongbei + russian-influenced (red sausage, harbin beer, russian-style bread, dill, paprika).
History & character
Heilongjiang is the northernmost province in China — bordering Russian Far East along almost its entire northern and eastern frontier. The provincial name means "Black Dragon River" — the Chinese name for the Amur, which traces the border. The province was lightly inhabited until the Russian-built Chinese Eastern Railway opened in 1903, drawing labour, capital, and a substantial Russian community to Harbin.
That Russian heritage still defines Harbin's centre — Saint Sophia Cathedral, the Central Avenue with its cobbled European-style facades, Russian bakeries and beer halls. The Harbin International Ice and Snow Sculpture Festival, running January–February, is the largest ice festival in the world and the city's main international draw.
Beyond Harbin, the province is a vast expanse of forest, wetland, and grain agriculture. Wudalianchi (volcanic landforms), Mohe (China's northernmost town, reached via the Russian-style station at Beiji village), and the Sanjiang Plain wetlands draw smaller numbers of nature-focused visitors.
When to visit
January–February for the ice festival — non-negotiable kit: thermal base layer, down jacket, fur hat, insulated boots. June–August for green forests and Mohe's white nights. Avoid March (mud) and November (cold without snow yet).
How to get there
Harbin Taiping Airport (HRB) is the major hub. HSR from Beijing 7h, from Shenyang 2h30m. The Trans-Manchurian portion of the Trans-Siberian railway crosses Heilongjiang at Manzhouli (technically Inner Mongolia but the rail line passes through).

A simple Dongbei stir-fry of aubergine, potato and green pepper — the vegetarian staple of northeastern China.
A robust northeastern 'everything pot' of pork ribs, aubergine, potato, beans and corn braised together in a clay pot.
Crispy battered pork slices in a sweet-and-sour vinegar sauce — a northeastern Chinese dish created in Harbin.
A long-simmered northeastern stew of fermented cabbage with fatty pork — warming, sour and deeply satisfying.
