Eating in Suzhou
Suzhou cuisine belongs to the Jiangsu tradition — lighter and more delicate than its Shanghainese neighbour, with a preference for fresh river produce, subtle sweetness, and careful presentation. The city's canal heritage and silk-weaving culture shaped a culinary style in which ingredients are not obscured by heavy saucing.
松鼠鳜鱼
Squirrel-shaped Mandarin Fish
Whole mandarin fish scored and fried into a crisped fan shape, then doused tableside with a sweet-sour tomato and pine nut sauce.
Where to try: Songhelou Restaurant (松鹤楼), Guanqian Street — the dish's most cited origin point; over 200 years old.
碧螺虾仁
Biluochun Shrimp
River shrimp stir-fried with Biluochun green tea leaves; a Suzhou equivalent of Hangzhou's longjing shrimp, best in spring.
Where to try: Classic Suzhou restaurants in the Guanqian Street area during March–May harvest season.
苏式汤圆/馄饨
Wonton Soup
Thin-skinned wontons in a clear bone broth, garnished with dried shrimp and spring onion; a Suzhou breakfast staple.
Where to try: Small noodle shops along Shiquan Street and the lanes around Pingjiang Road.
海棠糕
Begonia Cake
Small iron-moulded cakes filled with red bean paste and cooked until caramelised at the base; sold at canal-side stalls.
Where to try: Canal-side vendors on Shantang Street (七里山塘) in the early morning.
大闸蟹
Dazha Crab
Hairy crab from Lake Yangcheng (near Suzhou), steamed and served with Zhenjiang vinegar; in season October–December.
Where to try: Waterfront restaurants near Yangcheng Lake; seafood restaurants around Suzhou Train Station area in season.

Shantang Street (七里山塘) is the most atmospheric street-food canal walk in Suzhou — vendors sell begonia cakes, stinky tofu, and preserved plum-glazed meats from canal-side stalls. Guanqian Street's covered food lane has breakfast stalls open from 06:30. The covered wet market near Guanqian has Suzhou's best selection of fresh water chestnuts, lotus root, and seasonal river fish.
