Eating in Hong Kong
Hong Kong's food scene layers Cantonese cooking — at its most refined anywhere — with decades of British, South-East Asian, and Japanese influence. The cha chaan teng (茶餐廳, Hong Kong café) is a uniquely local institution, as are the dai pai dong open-air food stalls and the Michelin-recognised yum cha teahouses.
燒鵝
Roast Goose
Whole goose marinated with star anise, soy, and maltose syrup, then roasted until the skin blisters and crisps.

Springy alkaline noodles in a clear broth with plump shrimp-and-pork wontons; served in a shallow bowl.

Egg Tart

Temple Street Night Market (廟街) in Yau Ma Tei (MTR: Jordan) is the most atmospheric street-food destination — dai pai dong stalls serving clay-pot rice, stir-fried clams, and fish-ball noodles run until midnight. Graham Street Market in Central is the last surviving open-air wet market on Hong Kong Island, with fresh fruit, vegetables, and dried goods. Mong Kok's Fa Yuen Street area has cheap noodle shops and skewer stalls.
