Eating in Beijing
Beijing's food culture is rooted in imperial court tradition and northern wheat staples — duck roasted in palace ovens, hand-pulled noodles, lamb hotpot, and sesame-dressed cold dishes. The capital draws cooks from every province, so almost any regional cuisine is available, but its own character is hearty, salty, and unhurried.
北京烤鸭
Peking Roast Duck
Whole duck air-dried and roasted in fruit-wood ovens; served with pancakes, spring onion, cucumber, and hoisin sauce.
Where to try: Da Dong Roast Duck (大董烤鸭), Dongcheng branch; or the original Quanjude on Qianmen Street.
炸酱面
Zhajiangmian
Thick wheat noodles topped with a slow-cooked fermented soybean and minced pork sauce, garnished with julienned cucumber and radish.
Where to try: Old Beijing Zhajiangmian (老北京炸酱面大王), Chaoyang district; neighbourhood noodle shops in Gulou area.
涮羊肉
Lamb Hotpot
Paper-thin mutton slices swished in a copper split-pot of clear and red broth; the Mongolian heritage version uses plain bone broth.
Where to try: Donglaishun (东来顺), Wangfujing; Nanmen涮肉 in Gulou hutong area.
煎饼果子
Jianbing Guozi
Griddle-fried mung-bean crepe smeared with egg, chilli paste, and fermented sauce, folded around a crisp wonton cracker.
Where to try: Street carts in residential hutong areas early morning, particularly near Gulou and Andingmen.
豆汁
Douzhi
Fermented mung-bean milk — sour, grey, and an acquired taste; a point of civic pride for native Beijingers.
Where to try: Yao Ji Douzhi (姚记炒肝), Drum Tower area; Niujie Muslim street market.
